엉겅퀴(학명: Cirsium japonicum var. maackii)은 국화과에 속하는 여러해살이풀로, 전체적으로 하얀 털로 덮여 있으며 꽃은 보라빛을 띠고 민들레와 비슷한 모양을 가지고 있습니다. 이 식물은 오랫동안 지혈 작용이 있는 식물로 알려져 왔으며, 봄에는 여린 잎을 데쳐서 나물로 먹기도 합니다.

특히 이 엉겅퀴는 스코틀랜드의 국화로도 알려져 있습니다. 중세에는 엉겅퀴의 가시 때문에 노르웨이 군대가 기습하려다가 스코틀랜드 병사들이 기습을 막아낸 일화가 전해지기도 했습니다.

이 식물은 전체적으로 하얀 털이 덮여 있어서 보기보다는 억세어진 털로 보입니다. 그러나 실제로는 잔가시에 가까운데, 잔가시가 피부에 닿으면 꽤나 쓰라립니다. 이러한 특성으로 인해 한국에서는 고려시대에 '쐐기풀'로 불리는 엉겅퀴로 옷을 짓는 이야기가 전해지기도 했습니다.

또한, 엉겅퀴는 여러 게임이나 영화에서도 등장하는데, 월드 오브 워크래프트에서는 이를 이용하여 기력 회복 아이템을 만들기도 합니다. 또한 엘더스크롤 시리즈에서는 연금술 재료로 사용되기도 합니다.

이 식물은 밀크시슬이라는 다른 엉겅퀴와는 조금 다르며, 밀크시슬의 씨앗에서 추출한 실리마린이라는 물질은 간 건강에 도움을 줄 수 있다고 알려져 있습니다. 하지만 엉겅퀴의 가시 때문에 살짝이라도 찔리면 통증이 오래 가고 환부가 빨갛게 부을 수 있습니다.

또한, 울릉도에서는 섬엉겅퀴가 부드러워 각종 국물 요리에 애용되는 반면, 육지에서는 가시가 많아서 식용으로 즐겨먹지 않습니다. 육지에서는 대부분 새순을 캐서 나물로 만들거나 된장국에 넣어 먹습니다. 맛은 의외로 특이한 맛이 나지 않고 순한 편이라 야생 나물 중에서도 부담 없이 먹기 좋은 식물로 알려져 있습니다.
